Real Conservera Mussels in Escabeche

These deliciously plump Mussels in Escabeche from Spain are a truly amazing seafood delicacy. The mussels are fried in olive oil and then paired with a delicious escabeche dressing before being canned. These mussels were ranked in the Top 10 Best Canned Food Products in the World in the Mollusc category. (2021 World’s 101 Best Canned Products from the Sea).

The mussels have an appealing strong reddish colour, and a soft texture and pickled flavour with vinegary nuances. Best enjoyed chilled they’re perfect with a beer!

French Duck Fat

Duck fat is currently in short supply due to supply problems out of France at the present time. But we still have good stocks! If you love using it as much as we do it would be wise to stock up.

We love cooking with French duck fat or

Graisse de Canard

as the French call it. It has a much higher smoke point than butter and many other oils, which means it can be heated to higher temperatures without creating smoke and affecting the flavour of the fat. So it’s perfect for frying, searing and roasting almost anything.
